it depend on what you're eating?
It's about time I got into the Get Lost monthly
event with recipes! After all, I am your mom. Recipes are my
thing--well, one of them anyway, and I figure your readers need
what I have to offer - SIMPLE recipes for Getting Lost.
Here's the recipe. It's from the fellow who cuts my hair here
in beautiful downtown Bigfork, Montana. I'm sure you'll remember
it from my ill fated TV debut.
MEDITERRANEAN BLACK BEAN SALAD
- 1 4 Oz. jar marinated artichoke hearts
- 1 red bell pepper, slivered,cut in quarters (save the marinade)
- 1 16 Oz. can chilled black beans, drained and rinsed
- 1/2 cup sliced scallions, include some of the green tops
- Crumbled feta cheese
Mix all ingredients together except feta cheese and place in
a serving bowl. Pour marinade from artichokes over all and toss
and chill. At serving time sprinkle with feta cheese and serve
with tortilla chips. Good old greasy Fritos are great.
